What to do with leftover pumpkins!
Whilst out foraging for chestnuts the last couple of days we’ve noticed lots of discarded pumpkins which have been left to feed the wildlife. As keen nature and wildlife lovers we love this idea as we hate seeing food going to waste!
But how else can we make the most of the flesh and seeds of this winter fruit? There are many recipes based around the sometimes forgotten pumpkin and one of my favourites has to be homemade pumpkin soup.
Homemade pumpkin soup
This soup is the perfect winter warmer and easy to make!
We just add tinned tomatoes, onions, vegetable stock, cumin and coriander and top with a dollop of soured cream. We like to sprinkle some of the roasted pumpkin seeds on top to give it a slight crunch. The roasted seeds are also great as a snack, just sprinkle with a little cumin and coriander to give a bit of spice.
Spiced Pumpkin Chutney
Another way we use the pumpkin flesh is in our homemade spiced pumpkin chutney. Its the ideal accompaniment to a cheeseboard on a cosy Autumn evening. As this is a seasonal product it is only available throughout Autumn and Winter.
